What should I use for roof grease containment?
Choose a containment system sized for your fan discharge that captures grease and protects the roof. Replace absorbent media as needed and ensure the tray or housing is compatible with your roof surface.
What does “cleaned to bare metal” mean?
After service, grease deposits are removed so the base metal is exposed on hoods, ducts, fans, and related parts. Use suitable tools and methods for your materials and verify results with lighting and inspection tools.
Do I need access panels in ducts?
Yes. Access openings are required where needed to reach all interior duct surfaces—typically at regular intervals, changes of direction, and near equipment—so the entire system can be inspected and cleaned.
Which hood filters are acceptable?
Use listed, rigid metal baffle filters sized to your hood. Mesh filters are generally not permitted as the primary grease filter unless part of a specifically listed hood assembly. Install baffles in the correct orientation and keep spares for rotation.
How often should a commercial kitchen exhaust system be cleaned?
Inspection frequency depends on cooking type and volume. Many high‑volume operations are inspected quarterly, solid‑fuel monthly, and low‑volume semiannually or annually. Clean whenever grease is present beyond allowable levels and document what was serviced per local requirements.
Are hinge kits required on rooftop upblast fans?
Most jurisdictions that adopt NFPA 96 require upblast exhaust fans serving grease ducts to be hinged with a hold-open feature and flexible wiring so the fan can be safely opened for inspection and cleaning. Always confirm details with your AHJ before installation.
